With colder and shorter days we usually spend more time inside where it’s warm and cosy. And what better pastime is there than making magic with your spatula? Baking chocolate muffins is  fun and easy with delicious results that will appeal to every sweet tooth. Finally add some apple to make them even more juicy and tasty.

Try out this festive chocolate muffins recipe made from kefir and decorated with apples.

 

Chocolate muffins with kefir and apple recipe:

Ingredients:chocolate muffins

1 cup sugar
2 cups wheat flour
1 tbsp quality coco
1 heaped tbsp Nutella
1 cup kefir
1/2 cup oil
12 g backing powder
1/2 tsp vanilla powder or seeds from 1 vanilla pod
2 eggs
1 apple
1 tbsp brown sugar

Mix the ingredients until you get a smooth batter. Fill the muffin cups with batter. Cut the apple into slices and garnish the batter by sticking one end of the slice into it. Sprinkle the apple slices with brown sugar – it will caramelise slightly while in the oven. Bake the muffins at 180 °C for about 20 minutes.

  • These muffins look really yummy and I’m sure they are!
    Yet, I don’t get the reason of the use of Nutella. It’s tasty, it’s creamy, it’s delicious – I got it… but it’s highly unhealthy.
    In my meandering opinion, it should not be added to any health recipe!

    • Happy to hear you are enjoying the recipe. It really is a sweet treat, but we can indulge a bit since it’s holiday season. 🙂 Nevertheless you can easily substitute Nutella for a more healthy ingredient of your choice (you can even make your own hazelnut spread). Try it out and tell us how it goes.

    • I agree with Beatrice! Kefir is so healty, to bad to put something like Nutella. I will try out the recepie but substitute nutella with raw vegan cocoa and also wheat flour will substitute with more healthy flour. And no sugar 🙂 I put honey instead.

  • In these days of GMO it would be most advisable to recommend in your recipe to use an organic flour or an alternative one that contains no wheat for those who react to it. Kefir is still considered an alternative product (not mainstream) which I thoroughly enjoy and substitute where ever milk is called for in a recipe but before you put out another recipe, you need to think about the type of audience that uses Kefir and we are for the most part very health conscious. Recommending nutella no matter how small the amount goes against the grain of probably the majority of your readers. Including a home made recipe for it would have been a wonderful inclusion. I have one if you need one.

    • Kefir is a traditional beverage made from live cultures. It has many positive effects on body, skin and general wellbeing. By promoting these recipes we want to present many different uses of this fermented drink. The use in baking does mean the probiotic value is lost nevertheless if you have some extra kefir (which is common) you can also use it for cooking, baking etc.

      • Itried out muffins with kefir couse I had a lot of it. Althou I just find out that probiotic are lost, I was very satisfied with the taste. So far best muffins till now 🙂 I like the variety of use. I often put it in vegetable soup instead sour cream, like you published in pumpkin soup.

      • I make kefir everyday, and always have plenty on hand. Along with drinking it and using it to make kefir cheese, etc., I also use it in place of buttermilk in my baking. It makes biscuits, cornbread and pancakes very moist and light. They always turn out delicious.
